Healthy Holiday Cookie Recipe

Here in the office we have been on our health grind, which is unfortunate seeing as the holiday season offers so many delectable sweets. Thankfully we stumbled upon this delicious vegan cookie recipe from thekindlife.com. So go ahead and pop these suckers in the oven feeling completely guilt-free!

  • 1 1/2 cups whole wheat pastry flour
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons dry ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon salt
  • 3/4 cup maple syrup
  • 1/2 cup safflower oil
  • 1/4 cup molasses
Follow these steps:
1. Preheat the oven to 375 Degrees
2.Combine the flours, baking soda, baking powder, ginger, pumpkin pie spice, and salt in a large mixing bowl
3. In a separate bowl whisk together the syrup, oil, and molasses. Add wet to try and mix together
4. Roll out dough to desired thickness between two sheets of parchment paper and cut dough with the festive cookie cutter of your choice!
5. Place cookies on prepared baking sheets and bake for 10 minutes
6. Eat up!
